Phirni is a wonderful, creamy dessert made with ground rice combined with milk and sugar. This dessert also tastes great when flavored with saffron or rose essence or with mango. I thought I will make almond phirni to cut the carb and make it healthier. I used store-bought almond powder and soaked it in milk and made a creamy paste. You could use fresh almond and soak them overnight and paste it.
Ingredients:
1/4 cup Basmati rice
1 cup blanched almond powder
1-liter milk and 1/2 cup more to soak the almond powder
1 tablespoon ghee
1 can evaporate milk
1 pinch of saffron
1 tablespoon chopped almonds
1 tablespoon chopped pistachios
1/2 teaspoon cardamom powder
1 can of condensed milk
2 pinches of saffron for garnish
1tablespoon of ground pistachios
Methods:
Wash the rice and dry it. Then grind the rice into a coarse powder (do not make it too fine).
In a bowl, soak the almond powder into 1/2 cup of milk and make a paste.
Put a pan on medium heat and add the milk and the evaporated milk and let it boil.
Then add the cardamom powder and the ground rice and let it cook for 10 mins on medium-low heat or until the rice is cooked and the consistency is thick.
Add saffron to it.
When the rice is completely cooked add the ghee and the soaked almond paste.
Mix it and cook for a few more mins.
When it reaches the desired consistency. turn off the heat.
Add chopped nuts and mix it.
Before serving garnish with ground pistachios and saffron strands.
Enjoy chilled almond phirni.
