Beguni / Baingan Pakoras / Eggplant Fritters

Beguni is a common delicious Bengali crispy snack that we enjoy as a tea snack or actually any time snacks. Especially on rainy days, Bengali people love their Tel-e-Bhaja (fried fritters), and beguni is one of the favorite street food of Bengal.



Prep Time: 10 mins

Making Time: 15 minutes

Servings: 20 pieces


Ingredients:

  1. 1 cup besan /gram flour/chickpea flour

  2. 1/2 teaspoon turmeric powder

  3. 1/2 teaspoon salt

  4. 1/2 teaspoon sugar.

  5. 1/2 teaspoon kalonji / Kala jeera/ Black caraway

  6. 1 teaspoon poppy seeds

  7. 1/2 teaspoon red chili powder

  8. 1 cup water

  9. Pinch of baking soda

  10. 1 large eggplant thinly sliced

  11. Oil to fry

Methods:


Cut the eggplants into thin long slices.


In a bowl, whisk together besan or gram flour, turmeric powder, salt, sugar, chili powder, kalonji to combine.



Add poppy seeds and a pinch of baking soda and mix well.

Add water and make a smooth batter. (It wouldn't be too thick or too thin )


Now eggplant slices and dip them into the besan batter and deep fry them to a golden brown.

Enjoy warm crispy beguni with a hot cup of tea.
