This Bengali sweet made from chhena (Indian cottage cheese) that are made with three basic ingredients whole milk, condensed milk and milk powder .Here's a basic recipe making them at home:
Ingredients:
1 liter full-fat milk
2 tablespoons white vinegar
1/2 can condenced milk (as per taste)
1/3 cup powder milk + some more for coating the balls
1/2 tsp cardamom powder
Chopped pistachchios for garnish
Instructions:
Prepare Chhena(cottage cheese):
Heat the milk in a heavy-bottomed pan until it comes to a boil.
Add vinegar gradually to the boiling milk until it curdles. Stir gently.
Once the chhena (curdled milk solids) separates, strain it using a muslin cloth or a fine sieve.
Run cold water over the chhena to remove the sourness from the vinegar.
press it gently to remove excess water.
Knead the Chhena:
Take the chhena in a large plate and knead it well until it becomes smooth and soft.
Knead until it forms a smooth, lump-free dough.
Make three parts.
Cook the Chhena:
In a pan, water and condenced milk .
Bring it to a boil, stirring until the condenced milk dissolves completely.
Add powder milk and mix it properly.
Next add two parts of those kneaded chhena to the pan.
Stir it until the chhena dissolves completely.
Let it cook for few minutes until it slightly thickens.
Add cardamom powder for flavor.
Let it cook in low heat until the mixture thickend enough and leaves the pan.
Next add the last Part of the kneaded chhena and mix properly.
When it incorporated properly,turn off the heat and let it cool for a while.
Next make small balls and roll them in dry milk powder.
Garnish them with chopped pistachchios .
