Oats are the healthiest grain on earth. It has many health benefits. It helps in weight loss, lower blood sugar levels, and a reduced risk of heart disease. So we need to eat our oats regularly. :) At the same time who does not like chocolate and pancake for breakfast? So I combined them both and made a healthier combo. This combination is a yummilicious one. One of my favorite Sunday morning breakfasts.
PREP TIME: 10 mins Cook TIME: 30 MINUTES SERVINGS: 6
Ingredients:
1 cup all-purpose flour
2 eggs
1 cup whole Milk
1/3 cup instant oatmeal
1/4 tablespoon cocoa powder
1/4 teaspoon salt
2 teaspoons baking powder
3 tablespoons melted butter
2 tablespoons honey
1 teaspoon vanilla extract
Methods:
In a large mixing bowl, add the flour, oats, baking powder, salt, cocoa powder, and mix all dry ingredients together. Slowly combine the other wet ingredients - melted butter, honey, vanilla extract, eggs, and milk. Gently mix everything and make a smooth batter.
Let the batter sit for 10 mins on the countertop, so that the oats absorb some of the liquid and get softer.
Put a flat frying pan on medium heat. Lightly butter it and pour 1/3 cup of batter on it.
Cook 1 and 1/2 min to 2 mins each side.
Use the same process and make all of the pancakes.
Ingredients:
1/3 cup sliced strawberry
1/3 cup blueberry
1/3 cup raspberry
1/3 dates (pitted and sliced)
2 tablespoons honey
1/2 teaspoon ginger paste
1/2 juice of 1/2 lemon
Methods:
In a saucepan, take the sliced berries, sliced dates, gingerpaste, honey and lemon juice and put on low to medium heat.
Once bubbling, reduce heat slightly and cook for 10 mins and stir occationally.
Check the sweetness, if you like more sweet, add more honey and mix it.
Donot over cook the fruits. Make sure the berries are little chunky not too smooshy.
Remove from the heat and transfer to a clean jar bowl or jar.
Let it cool thoroughly.
Serve with pancakes, waffles, french toast, and more!
