I got this recipe from a food network tv show. This recipe is really yummy. Slightly sweet cornbread along with cherry tomatoes, mozzarella cheese, and crunchy cucumber, and the tangy red wine vinaigrette makes a refreshing salad. You can use a store-bought cornbread or bake one. I bought a store-bought cornbread mix and baked a fresh cornbread just before preparing the salad. So the warm bread gives an extra aroma to the salad.

Ingredients:
2 cups cornbread cubes
1 cup halved cherry tomatoes
1 cup cubed mozzarella cheese
1 cup cubed cucumber
1 onion chopped bigger pics
1/4 cup chopped cilantro leaves or any herbs you like
1/2 teaspoon dry basil leaves.
1 teaspoon honey
3 tablespoon olive oil
2 tablespoon red wine vinegar
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon of crushed chili pepper
Methods :
Put cornbread, cherry tomatoes, onion, mozzarella cheese cubes, cucumber, cilantro in a salad bowl and toss gently to combine everything together.
In a bowl take red wine vinegar, oil, dry basil, crushed red chilis, salt, and pepper and mix well.
Pour the red wine vinaigrette over cornbread and veggies and toss them lightly.
Serve the cornbread salad along with any protein entree dish.
