This simple side along with any heavy entree dish. It's a combination of salad and mash potatoes. Traditionally we cook mashed potatoes that creamy one, but this hand-pressed mash potato looks pretty and tasty at the same time. The traditional mash potato is a little heavy, but this one is with the lemony vinaigrette and that helps to refresh the tongue and makes this hand-pressed mashed potato light, and of-course the salty capers are a bonus. You can add any vinaigrette that you like. This recipe idea is adopted from a celebrity chef's recipe and recreated with my own spices.

INGREDIENTS :
1/2 pound baby potatoes
2 tablespoons olive oil
2 tablespoons lemon juice
1 clove minced garlic
1 tablespoon chopped cilantro
1/2 teaspoon crushed red chili
lemon zest
Salt and pepper for seasoning
oil to shallow fry the potatoes
1 tablespoon capers
Methods :
In a pot, boil the potatoes until the potatoes are fork-tender.
Drain the potatoes and let them dry.
Press the potatoes with the palm gently until it's lightly smashed, but try to keep it intact
Heat a pan with some oil.
Add the minced garlic.
Fry the potatoes on both sides golden brown.
In a bowl, take oil, lemon juice, cilantro, red chili, and lemon zest and mix them well.
Add salt and pepper, to according your taste.
Spread the dressing over the fried potatoes
Sprinkle the capers over the potato salad and serve warm.
