In wintertime, soft Madeleine cookies are always yummy in the morning or the evening with a cup of coffee. Especially during holiday time, these cake-like cookies are also really good with a hot chocolate mix or cocoa mix. We always buy from the stores, the plain one, but wanted to enrich the flavor with some more ingredients, so we added raisin. These soft, delicate cookies are my all-time favorite. Earlier I made these cookies a few times and every time corrected my past mistakes. Sharing those tips with you all that I learned to make a soft batch of Madeleine cookies.

Ingredients :
10 Tablespoons unsalted butter
2 large eggs
½ cup of sugar
1/4 teaspoon baking powder
3 Tablespoons brown sugar
1 cup all-purpose flour ( heaped )
2 teaspoons good vanilla
1/4 teaspoon salt
1 teaspoon lemon zest
2 Tablespoon raisin (chopped)
1/2 cup Powder Sugar ( For Icing)
Tablespoon of milk ( For Icing)
Dry coconut to sprinkle (optional)
Methods:
Mix one tablespoon of butter with one tablespoon of flour and brush it on the Madeleine mold pan and preheat the oven to 375 degrees F.
First, melt the butter and keep it aside to cool a little bit.
In a mixing bowl, combine eggs, white sugar, brown sugar, and vanilla.
Whisk enough to mix everything well combined and enough air incorporated into the mix.
Then mix the flour and the baking powder and salt.
Add the flour mixture into the egg and sugar mixture little by little.
Pour the melted butter gently fold into batter using a spatula.
Add chopped raisins and lemon zest and mix gently.
Put one tablespoon of batter into the buttered Madeleine pan.
Bake it for about 9 to 10 mins.
Take out from the oven and let it cool for 10 -25 mins.
Mix powder sugar and milk and decorate the Madeleines as you like or just simply sprinkle the powder sugar on them.
Serve Madeleine with a hot cup of Coffee.
