HOT AND SPICY LINGUINE WITH MUSSELS

Today I cooked Hot and spicy Linguine with Mussels for lunch. We had some mussels in the freezer for some time but we're thinking about what to make with them. Then thought why not make pasta and mussels with butter and white wine sauce along with some hot chili pepper and other spices. For a quick lunch, it was just awesome.


I have ordered it many times in restaurants but never cooked it at home. But have to say it's really easy. So if you’ve never made mussels before no worry they are really easy to cook, just follow this easy recipe. You may choose any kind of pasta, but I prefer linguine or Spaghetti for this recipe.

Ingredients:


1 pounds mussels cleaned and washed

1/2 pound linguine or spaghetti

1/2 cup good cooking white wine

1/4 cup finely chopped onion

3 tablespoons butter

1/4 cup and 1 tablespoon finely chopped Fresh Parshley

1 tablespoon Flour

1 tablespoon olive oil

2 cloves minced garlic

2 teaspoon crushed red chili flakes or as much you want

1 teaspoon dijon mustard

1/2 teaspoon cumin powder

1/2 teaspoon coriander Powder

1 lemon

1/2 cup broth

1 tablespoon heavy cream

1/4 cup grated parmesan cheese

1 teaspoon salt and 1/2 teaspoon freshly ground black pepper or according to taste.

Methods:


Take a covered saucepan to steam mussels with white wine, broth, onion, garlic, 2 tablespoon butter, parsley, salt, and pepper for about 5 to 8 minutes until the mussels open.

Discard any unopened mussels and separate the mussels from the pan juice.

Save the pan juice to make the sauce.

Bring a large pot of water to a boil. Add salt and then add the pasta and cook until tender but not too soft, about 10 minutes. Drain the water and put the boiled pasta in a large serving bowl.

Put the mussels over the cooked pasta in the serving bowl and keep it aside.

Take a saucepan, and heat the oil and 1 tablespoon butter over medium heat. Add the flour and stirring frequently, until it turns light brown. Add all the spices mustered, cumin powder, coriander powder, chili flakes and mix together. Then add the pan juice, heavy cream, juice until it little thickens in about 2 minutes. Check the seasoning and add more salt and pepper if it's needed.

Pour the sauce over pasta and mussels

Sprinkle the parmesan cheese, parsley, and lemon zest over the pasta and mussels.


Server warm hot and spicy linguine pasta with mussels.
