Pumpkin Spiced Pumpkin Soup!

Pumpkin soup is one of my favorite dish that is warm, cozy, and easy to make, especially in fall and winter. It has a smooth, creamy texture and a slightly sweet, earthy taste that I really enjoy. Made with simple ingredients like pumpkin, broth, and spices, and it can be adjusted to fit different tastes .


Ingredients:

  • 1 tbsp butter

  • 1 tsp of olive oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 tsp pumpkin spice

  • 1/4 tsp chilli flakes

  • 4 cups pumpkin puree ( freshly roasted pumpkin)

  • 4 cups vegetable or chicken broth

  • 1/2 cup heavy cream

  • Salt and black pepper to taste

  • Optional toppings: pumpkin seeds, croutons, fresh herbs (parsley or chives), or a drizzle of cream


Instructions:

  1. Sauté the Aromatics:

    • Heat the olive oil and butter in a large pot over medium heat.

    • Add the chilli flakes, chopped onion and garlic, sauté until softened and fragrant in about 3-5 minutes.

  2. Add Pumpkin and Broth:

    • Stir in the pumpkin puree and pour in the broth.

    • Add the pimpkin spice .

    • Bring to a boil, then reduce the heat and let it simmer for 10-15 minutes.

  3. Blend Until Smooth:

    • Use an immersion blender directly in the pot, or transfer the soup to a blender in batches, and blend until creamy.

  4. Add Creaminess:

    • Return the soup to the pot if blended separately.

    • Stir in heavy cream.

    • Season with salt and pepper to taste.

    • Heat through, but do not boil.

  5. Serve:

    • Ladle the soup into bowls and garnish with your favorite toppings like roasted pumpkin seeds, a swirl of cream, or fresh herbs or lemon slices .
