Pumpkin soup is one of my favorite dish that is warm, cozy, and easy to make, especially in fall and winter. It has a smooth, creamy texture and a slightly sweet, earthy taste that I really enjoy. Made with simple ingredients like pumpkin, broth, and spices, and it can be adjusted to fit different tastes .
Ingredients:
1 tbsp butter
1 tsp of olive oil
1 small onion, chopped
2 cloves garlic, minced
1 tsp pumpkin spice
1/4 tsp chilli flakes
4 cups pumpkin puree ( freshly roasted pumpkin)
4 cups vegetable or chicken broth
1/2 cup heavy cream
Salt and black pepper to taste
Optional toppings: pumpkin seeds, croutons, fresh herbs (parsley or chives), or a drizzle of cream
Instructions:
Sauté the Aromatics:
Heat the olive oil and butter in a large pot over medium heat.
Add the chilli flakes, chopped onion and garlic, sauté until softened and fragrant in about 3-5 minutes.
Add Pumpkin and Broth:
Stir in the pumpkin puree and pour in the broth.
Add the pimpkin spice .
Bring to a boil, then reduce the heat and let it simmer for 10-15 minutes.
Blend Until Smooth:
Use an immersion blender directly in the pot, or transfer the soup to a blender in batches, and blend until creamy.
Add Creaminess:
Return the soup to the pot if blended separately.
Stir in heavy cream.
Season with salt and pepper to taste.
Heat through, but do not boil.
Serve:
Ladle the soup into bowls and garnish with your favorite toppings like roasted pumpkin seeds, a swirl of cream, or fresh herbs or lemon slices .
