Today again, I cooked Kolkata style Biryani. I am fond of Biryani, and any time of the day I can eat it. Had a craving today and did not have much time , so I cooked today with my very own quick and easy recipe.
I have eaten so much of Biryani in so many restaurants, but nothing could beat Kolkata style biryani. It is always different and special for me. Kolkata is a city in the eastern part of India. My India trip does not complete without eating Biryani from a famous restaurant Aminia in Kolkata.
Usually, cooking biryani is an elaborate process, but In today's busy life, who has time for an elaborate process. So tried to recreate the flavor of Kolkata biryani with my own version of spices.

Servings: 3 to 4
Ingredients:
To make your own Biryani masala
Cardamom Powder -1/2 tsp
Cinamon powder - 1/2 tsp
Clove powder - 1/2 tsp
Cardamom Powder - 1/2 tsp
Nutmeg Powder -1/2 tsp
Roasted Coriander powder -1/2 tsp
Roasted Cumin Powder -1/2 tsp
Mix 1-7 spices as a Biryani masala and keep aside
Yogurt - 2 tbsp
Biryani masala - 4tsp
Oil - 1 tbsp
Ginger pest -1 tsp
Garlic pest - 1 tsp
Barista (Fried Onion) - 1 cup
Chili powder - 1/2 tsp
Milk - 4tbsp
Keowra water - 1 tsp
Rosewater - 1tsp
Saffron - Pinch
Mitha Atore - 3 drops
Saffron -pinch
Salt - 3 tsp
Lime - 1
Potato - 6 pcs (small)
Boiled egg - 6 pcs
Alloo Bakra - 5 pcs (optional)
Ghee (clarified butter) - 4 tbsp
Mewa (thickened milk) - 2tbsp
Barista (Fried Onion) - 1/2 cup, and Chili powder and keep it aside for 30 mins.
Whole spices( Cardamom big 1 and small 2-3,Cinnamon stick 1 inch, Clove 3-4)
Basmati Rice - 1 and 1/2 cups
Method:
Marinate the chicken with Yogurt, 2 tsp Biryani masala, Oil, Ginger pest, Garlic pest, Barista (Fried Onion) - 1/2 cup, and Chili powder and keep it aside for 30 mins .
Soak rice for 30 mins and cook with whole spices and 2 tsp of salt until it's half way done.
3. Fry Potatoes and keep them aside
4. Warm the milk and add saffron , Rosewater, Kewrawater, Mithaatore in it and set aside.
Assemble the Biryani for Dam(Cook in very low heat)
For that you need :
5. Take a heavy bottom pan to assemble the Biryani
6. Grease the Pan with Ghee.
7. From the very bottom
Layer :
Bay leaves
Chicken pieces
Fried Potato
Boiled eggs
Add spiced chicken broth
Barista (1/2 cup)
Sprinkle Biryani Masala 1 tsp
Lime juice
Mewa
Cooked Rice
Again Biryani Masala 1 tsp
Saffron milk
Rest of Mewa
Ghee
Then cover the pan with foil and dam( cook it in simmer) for 30 mins
Turn off the heat and let it rest for 10 mins
Serve the warm Biryani with Cucumber Mint Raita (Mix Yogurt, Onion, Cucumber and Mint)
