Rum And Raisin Cake !

A Winter Rum Raisin Cake is a delightful dessert that perfectly complements the cozy, festive atmosphere of the colder months. The combination of rum-soaked raisins and buttery cake creates a comforting, slightly spiced profile reminiscent of winter holidays.


Ingredients

For the Raisins:
  • 1 cup raisins

  • 1/2 cup dark rum

For the Cake:
  • 3 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 cup unsalted butter, room temparature and softened

  • 2 cups granulated sugar

  • 4 large eggs

  • 1 teaspoon rum extract

  • 1/2 cup whole milk

  • 1/2 cup Dark Rum


For the Glaze:
  • 1/2 cup powdered sugar

  • 1 tablespoons rum (adjust to taste)

Instructions

  1. Prepare the Raisins:

    • Soak the raisins in the dark rum for at least 2 hours or overnight for the best flavor.

  2. Prepare the Oven and Pan:

    • Preheat the oven to 350°F (175°C).

    • Grease and flour a large bundt pan .

  3. Mix Dry Ingredients:

    • In a medium bowl, sift together the flour, baking powder, and salt. Set aside.

  4. Cream Butter and Sugar:

    • In a large mixing bowl, cream the butter and sugar together until light and fluffy (about 3-4 minutes).

  5. Add Eggs and Rum extract:

    • Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.

    • Mix in the rum extract.

  6. Combine Wet and Dry Ingredients:

    • Mix the dark Rum and the Milk together.

    • Gradually add the dry ingredients to the butter mixture, alternating with the milk and rum mixture. Begin and end with the dry ingredients.

    • Mix until just combined.

  7. Add Raisins:

    • Drain the raisins (reserve rum for the glaze) and fold them into the batter.



  8. Bake:

    • Pour the batter into the prepared pan and smooth the top.

    • Bake for 60 minutes (for bundt) or 40 minutes (for round pans), or until a toothpick inserted in the center comes out clean.




  9. Cool the Cake:

    • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.


  1. Prepare the Glaze:

    • Whisk together powdered sugar and rum until smooth. Adjust the consistency by adding more sugar or rum if needed.

    Glaze the Cake:

    • Drizzle the glaze over the cooled cake and let it set before serving.
