I've got some vine-ripened fresh Roma tomatoes, so I decided to make a delicious Caprese salad. The vibrant and refreshing flavors of the homemade Caprese salad were truly enjoyable.
Ingredients:
3 ripe tomatoes, preferably Roma or vine-ripened, sliced
1-2 fresh mozzarella balls (about 8 ounces), sliced
Fresh basil leaves
Extra virgin olive oil (optional)
Good Balsamic vinegar
Salt and pepper to taste
Instructions:
Arrange the tomato slices and mozzarella slices alternately on a serving platter or individual plates, overlapping slightly.
Tuck fresh basil leaves in between the tomato and mozzarella slices.
Drizzle extra virgin olive oil and balsamic vinegar over the salad.
Season with salt and pepper to taste.
Serve immediately, allowing the flavors to meld together.
