Spicy Vegan Thai Red Curry with Pea Sprouts Fritters!

This Pea Sprouts FrittersThai red curry made a fantastic meal last night. It’s warm, comforting, and perfect for any cold day. It’s spicy, rich, but full of vegetables, and that makes it guilt-free happy eating.


Red curry is a popular Thai dish consisting of red curry paste cooked in coconut milk with protein, such as chicken, beef, pork, duck, shrimp, or vegetarian tofu. I thought of making it a total veggie delight with Pea Sprouts Fritters and lots of veggies.


You could use any veggie fritters you like. It will be equally good.

Ingredients::


1small chopped onion

2 large cloves chopped garlic

1 inch chopped ginger

3 chopped green chilis

1 small broccoli (cut into small pieces)

1 small cauliflower (cut into small pieces)

10 green beans (cut into small pieces)

2 small potatoes (cut into small pieces)

1 small carrot (cut into small pieces)

1 small green bell pepper (cut into small pieces)

1 small Red Bell pepper (cut into small pieces)

1 small yellow bell pepper (cut into small pieces)

2 small tomatoes (cut into small pieces)

6 white mushrooms (cut into small pieces)

1 can pineapple chunks (store-bought)

1 can Coconut milk (store-bought)

3 to 4 tablespoons Thai Red Curry paste (store-bought)

1 teaspoon chili powder

1 bunch Thai basil leaves

2 to 3 kaffer lime leaves

1 bunch Cilantro

2 tablespoons oil

1 teaspoon sugar (according to your taste)

salt and pepper (according to taste)

1 lime juice


1 lime and some basil leaves for Garnish.


For Pea Sprouts Fritters :


Ingredients :

1 bag pea sprouts greens

1 cup Gram flour /Besan

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon pepper


Method:





Methods:

  • Put a frying pan on medium heat.

  • Add oil and then add chopped onion, garlic, and ginger.

  • Saute for 2 mins.


  • Add potato and carrots and saute for 3 mins.

  • Next, add all chopped veggies and salt and pepper.

  • Saute for another 5 mins.

Next, add Thai Red Curry Paste and mix everything together.


  • Add coconut milk and a cup of water.

  • Add a spoon of sugar and mix everything.

  • Cover with a lid and cook for five minutes on low heat or until the carrots and potatoes are done.

  • Add all herbs - cilantro, Thai basil, and kafir lime leaves.

  • When the curry is your desired consistency, add fried pea sprouts-fritters and lime juice.

  • Give it a good stir and turn the heat off.
