Sun-dried Tomato Pesto Pasta!

Pasta dishes never fail to delight your taste buds. Whether it's the simplicity of spaghetti marinara or the richness of creamy carbonara, there's a pasta dish for every mood. Here's a simple and flavorful recipe for sun-dried tomato pesto pasta that my family loves.



Ingredients:

  • 1 pound of your favorite pasta (I used Tortellini)

  • 1/2 cup sun-dried tomatoes (packed in oil), drained

  • 3 cloves garlic, minced

  • 1/4 cup pine nuts or walnuts

  • 1/2 cup fresh basil leaves

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup extra-virgin olive oil

  • Salt and pepper, to taste

  • Juice of a lemon

  • Zest of a lemon

  • Handful of cherry tomatoes

  • red pepper flakes, for added heat

  • Additional grated Parmesan cheese, for serving

Instructions:


  1. Cook the pasta according to the package instructions . Drain and set aside, reserving about 1/2 cup of pasta water.

  2. In a blender, combine the sun-dried tomatoes, garlic, pine nuts, fresh basil leaves, grated Parmesan cheese, and salt and pepper. Pulse until the mixture is finely paste.

  3. While the food processor is running, slowly drizzle in the olive oil and lemon juice until the pesto is well combined and reaches your desired consistency. If the pesto is too thick, you can add a bit of the reserved pasta water to thin it out.

  4. Taste the pesto and adjust the seasoning as needed. If you like it spicy, you can add some red pepper flakes to taste.

  5. In a large mixing bowl, toss the cooked pasta with the sun-dried tomato pesto, lemon zest, and chopped cherry tomatoes until everything is well coated.

  6. Serve the pasta warm, garnished with additional grated Parmesan cheese if desired.

  7. Enjoy your delicious sun-dried tomato pesto pasta as a flavorful main course or side dish!



You can add grilled chicken, shrimp, or vegetables to make it even more hearty and protein reached.
