Methods:

First, Cook the Sushi Rice :

Wash the rice and put it in a rice cooker and add three cups of water and set it until cooked.

Or you can cook the rice in a saucepan on the cooktop over medium heat until the rice is fully cooked.

Meanwhile, mix together the rice vinegar, salt, and sugar in a small saucepan and cook over medium heat until the sugar has dissolved. Let it cool and set aside.

Put the rice in a mixing bowl and pour the vinegar sauce over the hot rice and mix it.

Allow cooling a little bit before using it in the sushi mat.

Now let's make the sushi rolls :

You need a Sushi roll mat. I used a silicone mat that I bought from Amazon.

  • Put 1 nori sheet on the sushi mat and cover it with rice.

  • Wet your fingers and spread the rice evenly onto the nori sheet.

  • Lay salmon, cucumber, avocado slices along the length of the rice in a strip. Make sure not to overfill it.

  • Add a blob of cream cheese along the edge of the filling with your finger.

  • Sprinkle some spring onion.

  • Roll up tightly into a cylinder and squeeze to seal when you reach the end.

  • Take out the green mat gently.

  • Cut the roll with a sharp knife 3/4 inch in width.

  • Serve with light soy, wasabi paste, pickled ginger, and salmon caviar.
