Watermelon and cucumber feta salad is one of the most refreshing salads of all time. This is perfect for summer. This is really very simple salad with a simple vinaigrette. Sometimes eating right is hard. It has to be full of all nutrients and definitely tasty to satisfy your taste buds. In a healthy and balanced meal, you have to have a variety of food, cut back on salt, reduce certain fats and oil, limit sugar intake, etc. Keeping all in mind, created this lunch meal. :) Feta is a little salty, so you can cut back on raw salt here. Also using extra virgin olive oil for good fat. No added sugar, I love the natural sweetness of the watermelon. This tasty refreshing salad will satisfy our mouth at the same time it's full of nutrients.

Servings: 2 to 4 servings
Ingredients:
1 kilogram cubed seedless watermelon
350 gram cubed cucumber or 1 medium cucumber
1/2 cup thinly sliced red onion
1/4 cup coarsely chopped mint leaves
1 cup crumbled feta
2 tablespoons balsamic vinegar
4 tablespoons extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Methods:
In a small bowl, make the vinaigrette - whisk together olive oil, balsamic vinegar, salt, and pepper.
In a large bowl, combine cubed watermelon, cucumber, red onion, and mint. Pour the balsamic vinaigrette over it, tossing to combine.
Then add feta to it and toss it lightly.
Garnish with more feta and mint leaves.
